Strawberry Cheesecake in a Cup


Crumble layer:
12 graham crackers, crushed into crumbs
½ cup sugar
1/3 cup butter, melted
1/4 cup flour
½ teaspoon baking powder
1 teaspoon vanilla extract
Cheesecake filling:
2 - 8 oz. pkgs. cream cheese, room temperature
½ cup sugar
1 cup heavy whipping cream
1 cup Cool Whip
1 teaspoon vanilla extract
1/3 cup lemon juice
20 fresh strawberries

Crumble dough:
Preheat oven to 350  . Mix graham crackers crumbs, sugar, butter, flour, baking powder and vanilla into
a crumbly dough. Spread on a parchment-lined baking sheet; bake for 10 minutes. Allow to cool
completely.
Cheesecake filling:
Beat the cream cheese and sugar until smooth and creamy.  Gradually beat in the cream. Add vanilla
and lemon juice and beat until the filling is light and creamy. Add Cool Whip.
Assemble:
Cut the strawberries into bite-sized pieces.  Layer the crumble, cheesecake filling and strawberries in
clear plastic dessert cups.
